Title: Spicey Fish Risotto

Ingrediants
- 1 tbsp Olive Oil
- 670 g Smoked cod or haddok fillet
- 1 tsp Chilli powder
- 1 Small Onion
- 2 Garlic cloves
- 750 ml Vegetable/Fish Stock
- 310 g Risotto rice
- 115 g Button mushrooms
- 1 Red Pepper
- Thyme
Method:
- Deseed and chop the pepper, chop the mushrooms and onion, crush the garlic and cube the fish fillet
- Put the olive oil in a hot pan and add the onions, chilli, mushrooms, pepper. Reduce the heat and cover for 3-4 minutes
- Add the rice, stock and season. Bring to the boil, cover and simmer for 15-20 minutes
- Test the rice to make sure its cooked, if its not add more stock and leave longer. Stir in the fish once the rice is ready, cover and simmer ffor 5 minutes adding extra stock if necessary.
- Sprinkle with choppedc thyme, maybe a little parsley and serve immediately.
