Title: Foolproof falafel burgers

Ingrediants
- 2 x 400 g Canned chickpeas, drained and washed
- 1 Small onion cut into chunks
- 1 handful parsley leaves
- 1 Zest and juice of lemon
- 2 teaspoons Ground cumin and ground coriander
- 6 tablespoons Plain flour plus extra for dusting
- 4 tablespoons Olive oil
- 4 Burger buns
- Red onion, spicy tomato salsa and plain yoghurt to serve
Method:
- Tip the first ingredients into a food processor. Season with pepper, and salt if you like, then pulse until you have a chunky paste. Tip the past onto a floured work surface and mould it into 4 burger shaped patties.
- Dust the patties in a little more flour. Heat the oil in a large non-stick pan and fry the burgers for 2 minutes on each side until crisp
- Serve in the buns with sliced red onion, spoonfuls of salsa and yoghurt and any other burger relishes you fancy
